Word of Loudly! : "This mixed fermentation blonde beer was matured in a stoneware jar (amphora) for a year with grape marc. As its name suggests, this time I opted for my favorite white grape variety, Chasselas. This beer is subtle and delicate, with a slight acidity. The long maceration of grape marc gives it delicate tannins and lovely aromas of raisins. Like all our beers, Canon Chasselas can be enjoyed today, or kept in the cellar for many years."
