Word of Cantillon : "In order to preserve the delicacy of the hops, the lambics chosen for the production of the Cuvée Saint-Gilloise are elegant and very refined in order to preserve the balance of acidity/bitterness. Since there is no blending with young Lambic as in Gueuze and no addition of fructose as in fruit beers, the second fermentation in the bottle of Cuvée Saint-Gilloise is due to an addition of liquid sucrose. Like all beers from the Cantillon brewery, the Cuvée Saint-Gilloise is a beer with a very long shelf life, but like all hoppy beers, it is advisable to drink it young to fully appreciate the floral notes of the hops."
