:"How do I work? Well, I deeply love the Friborg terroir in which I operate. And contrary to what this word suggests, the terroir is not fixed in tradition. Working the terroir means taking root in the products and the history that surround us to grow and extend numerous branches which will be as many varied products. This is my perception of this word and what I try to achieve every day through my terrines, rillettes , spreads, pestos, etc. I therefore work with the terroir to create new products which naturally follow the course of the seasons.
